I am one of the many who thoroughly enjoy a bit of seasonal pumpkin spice. However, I find the usual PSL to be a tad too... spicy. I mean, I just don't much enjoy the way aggressive cardamom tickles the back of the throat.

As an ex-Starbucks employee, I can tell you that the amount of sugary sauce they put in those things is kind of... sickening, to be honest. I wanted something a little softer, more mild. What I wanted was... pumpkin pie!

I give you: the perfect pumpkin pie cold foam recipe. It is truly so damn good. Might I say, the best way to top off an iced coffee or latte. Not too spicy, sweet, or milky - just right. Its homey, nostalgic, and the best way to immerse yourself in the fall spirit. 

1/4 cup pumpkin puree

1/4 cup brown sugar

1 cup milk

1 cup heavy cream

1/2 tsp vanilla bean paste (extract is fine, too)

1 tsp pumpkin spice

An immersion blender is the easiest and quickest way to get this mixed together and foamed up, but you can use a handheld frother or standing mixer, if you must. This recipe yields about 2 1/2 cups and lasts in the fridge for a week.
